West Palm Beach Brewery & Wine Vault

It's not every day we get to visit a brewery the first week it opens. We visited West Palm Brewery & Wine Vault on day-3. The grand opening was a VIP only event. By day-3 the they were in full gear and going strong. We started with a flight with a sampling of everything they had on tap. The first output from a brand new brew house is pretty exciting. Running all that magic through new lines, new fittings, into new pots, using brand new tools can make most people very nervous. We had the Evernia Saison (5.7% ABV), Palm Beach Porter (6.4% ABV), 561 Hefeweizen (4.7% ABV), B4 Blonde (4.5% ABV), Mosaic Pale Ale (6.0% ABV), Metermaid IPA (6.5% ABV) and 1-Star Dougie. It was a real nice variety of tastes and every one was a hit. We finished the flight, ordered up a few pints of the IPA and Porter and anxiously waited on our pizza. In addition to craft beer they offer craft wine, craft cheese, a range of brewery bites and yummy woodfire pizza. They plan to only brew and consume on premise so you will need to visit them in person or luck into finding a friend with a crowler but we suggest stopping in for a visit of your own. Head Brewer, Joel Kodner, left Due South Brewing Co and went a little North-West to open his own craft brew pub and wine vault. Owner John Pankauski has been making and bottling his own wine for years which he proudly displays behind the bar. Head Chef, Andrew Castardie, mans the 1,200 degree oven where he creates hand-made pizza topped with his own in-house made craft cheeses. We tried the Evernia chicken and mushroon and the Pepperoni Saison, and loved every bite. The brewery made cheese and fresh ingredients are the perfect companion to a pint of craft beer. With craft beer, craft wine and craft cheese this has to be the craftiest place in town. I had a chat with our server and she is going to pass on my suggestion to Andrew about offering some spent grain homemade pretzels, which we hope he considers. We're sure they will do well in the prime location with bright friendly family setting and so many yummy tastes to enjoy. Head on down to Evernia Street soon and see what's brewing.
